This terrace and others like it, appear to me to be relict ice age terraces. In the last ice ages, the climate was dryer than it is now, and they lasted for a very long time, with consequent build up of stable river/creek valley floors.
Once the ice ages finished, there was a great deal more precipitation, which would have led to an effective "rejuvenation" of the rivers and creeks in the area, which would have resulted in the incising of narrow, steep sided valleys in the existing broader valleys.
However formed, these elevated terraces are a great help in negotiating the gorge system, and are actively sought out by bushwalkers. They are by no means universal, more's the pity.
